Thanksgiving Ideas

We will start our dinner early because we have a heavy meal ahead of us. Our family starts Thanksgiving dinner on Labor Day.

Appetizers: nothing too fancy, again the heavy big diner is coming. Maybe some cheese and crackers, cheese balls (no cheese wiz), nuts and raisins mixed, vegetables and dip.

Turkey: Make sure the turkey is not frozen. Put it in the refrigerator over night until defrosted. Or, put turkey in sink with cold water running over until defrosted. Preheat oven to 350degrees. Make sure to take out all the insides. You can put instead: carrots, celery, salt, and pepper. Put the turkey in a roasting pan with wire rack on the bottom. Put a few cups of water in the pan. Put onions, carrots, celery, and potatoes in pan with the turkey. The vegetables will add a nice flavor to the turkey and make your home smell great. You can put salt, pepper, oil, butter, or margarine on the skin. Don’t put the lid on the pan. Instead, put a tent make from tin foil over the turkey. This will act as a self baster. The turkey is done when the meat thermometer reaches 165 degrees in the thickest part. We are not putting the stuffing inside the turkey. We will bake it separate to avoid food poising.

Stuffing: Sauté: onions, celery, carrots in margarine with salt, pepper and sage. Take dry plain bread and add chicken soup. Let the bread absorb the chicken soup. Take the vegetables and chop in food processor. Squeeze out excess soup from the bread. Mix vegetables and bread together and bake at 350 until done.

Vegetables: String bean almandine: Steam string beans and add toasted almonds
Or, broccoli with salt, pepper and butter

Twice baked potato: Use one baking potato for each guest, then add 2 more potatoes. Bake potatoes at 450degrees. They are done when you put a fork in and it goes in the potato easily. Take the potatoes and cut in half lengthwise. Scoop out potato. Mix in mixer with butter or margarine, salt, pepper and milk. Mix to taste. Put potato in large pastry bag with star or French star tip. Pip into pretty design in shell. Sprinkle with paprika and bake at 350.

Sweet potatoes: Bake potatoes and peel. Mix potatoes and put into hollowed out orange. Put mini marshmallows on top. Bake.

Apple Pie:

Pie crust:
1 1/4 cup all purpose flour
1 tsp. Salt
1/2 cup Crisco
5-7 Table spoons ice cold water
Cut Crisco into flour with 2 knives. When flour looks like cornmeal, all ice cold water. Mix just long enough to form a ball. Roll on floured surface and place in pie tin. Prick crust with a fork.

Filling:
5-6 Granny Smith apples, peeled, sliced and cored
1/3 cup Domino Dark Brown sugar
2 Table spoons dark rum
2 Table spoons cornstarch
Pinch of nutmeg
½ teaspoon cinnamon
2 tablespoons lemon juice
Mix all ingredients together and put into pie crust. You can put a top crust on. Make sure you score the crust so the steam can escape. Brush with egg wash and sprinkle with sugar. Bake at 375 for 30-50 minutes.

A note about Chanukah.
Chanukah comes early this year. But as my father always says, are the Jewish holidays ever on time?

For perfect potato latkes: Only use frying pans that are NOT non-stick. The non-stick do not get hot enough. Take red potatoes, peal and cut into chunks. Put in cold water. This will prevent the potato from turning brown. Cut and peal onions. We use 6 potatoes to 2 med-large size onions. Chop potato in food processor. Be careful not to make mush. Chop onions. Add together and put in strainer over a big bowl. Let drain. Take the drained potatoes and onions, add salt and pepper. Carefully drain out the liquid from the bowl. You will see starch from the potato. Take starch and add to the potato and onion mixture. Make sure to heat oil on high. Take spoonfuls of potato and put in hot oil. They are done when they are brown on both sides.

Apple sauce: Go to the grocery store and pick up a few apples of each kind. Red delicious, granny smith, gala, … Peal, slice and core apples. Put into pot on stove. Use low flame. Put in a little water. Let cook. When apples are soft, put into blender or food processor. Using many different kinds of apples adds wonderful flavor to your apple sauce. You may sprinkle cinnamon on top.
